Have you ever tried garlic chips? They’re slices of garlic that have been fried in oil until golden and crispy, and they’re absolutely delicious!
You might have seen chefs making teppanyaki in front of you at teppanyaki restaurants in Japan. It is a great topping that adds a crunchy texture and garlic flavor to various dishes. It’s often used with steak, fried rice, ramen, donburi, and stir-fry dishes.
How I Developed This Recipe
What’s important when making garlic chips? Firstly, achieving a beautiful golden brown color without burning, and secondly, achieving a crunchy texture.
I tried a bunch of different approaches before landing on this method, and it’s been the best so far. It’s incredibly crunchy, making it the perfect topping not only for Japanese cuisine but for all kinds of dishes!

Start by peeling, coring, and thinly slicing the garlic cloves. They should be about 3 mm (a bit more than 1 inch) wide. Thinner slices won’t make satisfying chips, so go for a nice, slightly thick slice!
When you’re using garlic in recipes that involve frying, it’s a great idea to first check if the garlic cloves have a firm core. This can affect how evenly the garlic cooks, so it’s important to be aware of it!
To do this, simply cut each garlic clove in half lengthwise. If you observe a firm, greenish core in the center, just remove it.
Once you’ve done that, put the garlic in a bowl of water. This helps to rinse off any residue, making sure the garlic is clean and ready for frying.
Once you’ve rinsed the garlic, strain it through a colander and then pat it dry with paper towels.
This drying process is also really important for creating that crunchy texture!
Next, put the dried garlic slices and cooking oil in a small, cold frying pan. The recipe card below says to use 4 tablespoons, but you can adjust this a bit depending on the size of your pan. As a general rule of thumb, just use enough oil to fully submerge the garlic slices.
Then heat the pan over medium-low heat.
I used rice bran oil this time, but you can use other cooking oils. Consider the garlic-infused oil you’ll get after the chips are done, such as olive oil for pasta dishes or toasted sesame oil for Chinese dishes!
As soon as bubbles start to form around the garlic, turn the heat to the lowest setting.
Gently fry the garlic for about 10 to 15 minutes, stirring occasionally. Keep an eye on it because it’s important to pull the garlic out of the oil once it turns golden. This golden color is exactly what I’m looking for.
Once the garlic is golden, just strain it through a colander to separate it from the oil. I save this leftover oil infused with garlic because it’s perfect for adding a burst of flavor to dishes like fried rice.

Ingredients
- 1 garlic bulb (approximately 10 cloves)

Instructions
- Take 1 garlic bulb and peel the cloves. Trim the ends and remove the cores (germ) to prevent bitterness.
- Thinly slice the cloves.
- Place them in a bowl of cold water and swish to remove residue.
- Drain and pat thoroughly with kitchen paper to dry them.
- Place the garlic slices in a small cold pan and add cooking oil until submerged. Heat on medium-low, and when the oil starts to bubble, reduce the heat to the lowest setting.
- Gently fry the garlic until they become golden. Stir occasionally to prevent burning.
- Once golden, use a mesh spoon to scoop the garlic slices out of the oil and place on kitchen paper to absorb any excess oil.
- Store in an airtight container to maintain the crispiness and enjoy on ramen, salads and more!
