Bean sprouts are a very popular topping in Japanese ramen, and for good reason! Their unique crunchy texture and slightly sweet flavor go perfectly with ramen noodles, and they really come into their own when added to hot broth.
Some restaurants serve just lightly boiled bean sprouts as a topping, while others lightly season them.
This recipe features slightly spicy bean sprouts that work very well with any type of ramen!

First things first! Grab a mixing bowl and add all the ingredients for the dressing. Give everything a good stir to combine it well, then set the bowl aside for later.
This dressing is a little salty, but that’s because it includes chicken stock powder. If you’d rather not have that salty flavor in your bean sprouts, you can leave out the chicken stock powder.
Next, fill a pot with water and place it on the stove over high heat. Once the water comes to a full boil, add the bean sprouts and let them cook in the boiling water for just one minute.
Once the minute is up, quickly drain the sprouts in a colander. Then, give the colander a few good shakes to get rid of any excess water clinging to the sprouts.
Finally, transfer the hot, drained bean sprouts to the bowl with the dressing I prepared earlier. Using a spoon or tongs, I toss the sprouts with the dressing until they’re evenly coated on all sides.

Spicy Seasoned Bean Sprouts (Ramen Topping)
Ingredients
- 100 g beansprouts
Dressing
- 1 tsp Chinese-style chicken bouillon powder
- 1 tsp toasted sesame oil
- ⅛ tsp Japanese chili powder (shichimi togarashi)
- ⅛ tsp black pepper
- ½ tsp sugar
- 1 tsp rice vinegar
Instructions
- Bring a pot of water to a rolling boil and blanch 100 g beansprouts for 1 minute.
- Pour the blanched bean sprouts through a strainer and shake thoroughly to remove any excess water, be careful of the hot steam and water.
- Add 1 tsp Chinese-style chicken bouillon powder, 1 tsp toasted sesame oil, ⅛ tsp Japanese chili powder (shichimi togarashi), ⅛ tsp black pepper, ½ tsp sugar and 1 tsp rice vinegar to a bowl and mix until combined.
- Add the beansprouts to the bowl and mix thoroughly until evenly covered.
- Serve over ramen and enjoy!
