There's nothing more refreshing than zaru udon served with a delicious chilled mentsuyu sauce to cool you down on a hot summer's day. This recipe is quick and easy to make, not to mention highly customizable! It also goes great with tempura!

what you'll need:

» dashi stock » soy sauce » mirin » sugar » udon noodles » shredded nori » wasabi paste » grated ginger » tempura flakes » thinly sliced green onion

Make sauce

Add dashi, soy sauce and mirin to a saucepan and boil for 1 minute. Turn off the heat and add sugar, mix until dissolved.

Cool sauce

Pour into a heat proof jug and leave to cool. Mix to speed up the cooling process. Once cool to the touch, store in the fridge until it's time to serve.

Cook udon

Cook udon according to the instructions on the packaging. Drain, rinse with cold water and place in a sieve with ice cubes over a bowl to chill.

Prepare ingredients

Prepare a small dish for each portion with grated ginger, wasabi, chopped green onion or your choice of ingredients to mix with the sauce.

Serve

Place the udon on a bamboo tray (zaru) and top with shredded nori. Serve with chilled sauce and the dish of ingredients to mix. Enjoy!
