what you'll need:

» skin-on chicken thigh » cornstarch » zucchini » green onion » cooked rice » shredded nori » shichimi togarashi (optional)

for the sauce:

» soy sauce » mirin » sake » sugar » honey » grated garlic » chicken bouillon powder

Make the sauce

Mix soy sauce, mirin, sake, sugar, honey, grated garlic and chicken bouillon powder and mix until combined. Set aside for later.

Prepare chicken

Cut the chicken into bitesize pieces and place in a bowl with salt, pepper and cornstarch. Mix until evenly coated.

Fry the veg

Roughly cut the bell peppers and zucchini, and cut the green onion into 5cm pieces. Fry with oil over a medium heat until the green onions are lightly charred.

Fry the chicken

Transfer the vegetables to a plate and add more oil to the pan. Place the chicken with the skin side down. Once browned, turn and seal on the other side.

Add sauce

Add the vegetables back to the pan and pour in the sauce from earlier. Stir occasionally and cook until the sauce is thick and glossy.

Thicken

Once the sauce has thickened and evenly coated the chicken and vegetables, remove the pan from the heat.

Assemble

Divide the cooked rice into portions and top with shredded nori.

Serve

Top with the yakitori-style chicken and vegetables and garnish with chopped green onion and shichimi togarashi. Enjoy!
