what you'll need:

» cooked Japanese rice » potato starch » toasted sesame seeds » sesame oil » soy sauce » thinly sliced beef » frilly lettuce

yakiniku sauce:

» soy sauce » grated apple » grated ginger » grated garlic cloves » sake » honey » tobanjan (Chinese chilli paste)

Mix the rice

Add sesame seeds and potato starch to the cooked rice and mix well until evenly distributed.

Divide & shape

Divide the rice evenly and press each portion into a large cookie cutter/egg ring to shape into a disk. Refrigerate for 30 mins.

Make sauce

Mix the grated apple, ginger and garlic with soy sauce, sake, honey and tobanjan.

Marinate beef

Add the beef to the bowl and mix until evenly coated. Marinate in the fridge for 20 minutes.

Fry rice "buns"

Heat a large pan on medium and add sesame oil. Fry for 1 minute on each side while brushing top with soy sauce. Flip and fry for 30 seconds more then set aside to rest.

Fry beef

Heat a pan on medium and add the beef together with the marinade. Fry until the beef is cooked and the sauce is reduced completely.

Assemble

Assemble the rice burger in this order:  » rice "bun" (base) » layer of lettuce » yakiniku beef » rice bun (top)
