Prep the cucumber

Wash the cucumber and dry the surface with kitchen paper. Cut off the ends and discard.

Roughly cut

Cut the cucumber into rough pieces, ensuring each piece has some skin attached.

Add ingredients

Transfer the ingredients to a sealable bag and add the sugar, salt and wasabi paste.

Massage the ingredients together by gently rubbing the outside of the bag. Hold the top closed and shake it from time to time to evenly distribute.
