This quick and easy side salad is made with dried wakame seaweed, silken tofu, thinly sliced cucumber and mini tomatoes tossed in a refreshing rice vinegar based dressing. It's the perfect palate cleanser or side dish and goes especially well with fish dishes!

what you'll need:

» dried wakame seaweed » silken tofu » cucumber » mini tomatoes » bonito flakes (optional)

for the sauce:

» dashi (or water) » rice vinegar » soy sauce » sugar » sesame oil » ginger paste (or grated ginger) » ground sesame seeds

Soak the wakame

Soak the wakame in cold water according to the instructions on the packaging. (Usually 5-10 mins.)

Prepare tofu

Wrap the tofu in kitchen paper, place on a microwavable plate and microwave for 1 1/2 minutes at 600W. Allow to cool slightly and then cut into bitesize cubes.

Mix the sauce

Mix the dashi (or water), rice vinegar, soy sauce, sugar, sesame oil, garlic paste and ground sesame seeds in a jug until well combined and the sugar has dissolved.

Mix everything

Squeeze the water out of the rehydrated wakame and add it to a bowl with all the other ingredients, including the sauce! Cover and chill in the fridge for 20-30 mins.

Serve

Once chilled, top with a sprinkle of katsuobushi (bonito flakes - optional) and enjoy!
