what you'll need:

» Turbinado sugar » Muscovado sugar » Sake » Mirin » Soy sauce

Melt the sugar

Add the turbinado sugar and muscovado sugar to a small sauce pan and heat on medium.

Boil sake & mirin

Add the sake and mirin and bring the mixture to a boil, mixing occasionally. Boil for 1-2 minutes and lower the heat to a simmer.

Add soy sauce

Add the soy sauce and simmer on low for 10 minutes or until thickened to a syrup-like consistency.

Remove foam

Scoop out any foam that forms on the surface.

Cool & use

Allow the sauce to cool slightly and then use it to cook and drizzle over grilled eel.
