Moon Gazing Udon Soup with Egg & Bacon

Japanese udon noodle soup meets breakfast with this delicious Tsukimi Udon! Inspired by the Japanese custom of moon gazing, this unique dish is topped with sunny side up eggs and adorable kamaboko rabbits as well as delicious crispy bacon, tempura flakes and green onions!

what you'll need:

» dashi » soy sauce » mirin » salt » bacon » eggs » udon noodles » chopped green onion » tempura flakes

Make soup

Boil dashi, soy sauce and mirin in a pot for 1-2 minutes. Turn off the heat and mix in salt. Reheat before serving if necessary.

Fry eggs & bacon

Fry bacon until crispy on both sides, then crack two eggs into the pan and fry sunny side up until cooked to your liking. (If you prefer the yolk well cooked, steam with lid or flip.)

Cook udon

Cook udon according to the instructions on the packaging. Once cooked, drain and rinse with hot water before dividing into serving bowls.

Kamaboko rabbit

Cut along the pink part of a kamaboko fishcake until you reach the middle. Tuck the flap under to create rabbit ears.

Add a face

Place a black sesame seed for the eye and a small blob of ketchup for the cheeks.

Assemble

Divide the soup between the bowls and top with the eggs, bacon, kamaboko and a sprinkle of tempura flakes and chopped green onion. Enjoy!
