What you'll need:

» eggs » whole milk » cooking oil » green cabbage » salt and pepper » thinly sliced pork belly

Sauce & toppings:

» Worcestershire sauce » oyster sauce » ketchup » honey » soy sauce » Japanese mayonnaise » aonori

Make the sauce

Mix Worcestershire sauce, oyster sauce, ketchup, honey and soy sauce in a small bowl and set aside for later.

Whisk eggs

Crack the eggs into a bowl and add whole milk. Whisk until smooth and set by the stove.

Fry cabbage

Heat a pan on medium and add oil. Once hot, add shredded cabbage and green onions. Season with salt and pepper and stir fry until slightly softened, then transfer to a plate.

Fry pork

In the same pan, fry the thinly sliced pork until the fat is crispy and browned.

Set aside

Transfer the pork to the plate with the cabbage while you make the omelette.

Fry omelette

Wipe the excess fat out of the pan and pour the egg in an even layer. Fry until half cooked.

Assemble

Place the cabbage and pork in the middle of the omelette and fold the edges over.

Serve

Flip onto a plate and drizzle with the sauce from earlier, Japanese mayo and a sprinkle of aonori. Enjoy!
