what you'll need:

» pork belly block » daikon radish » carrot » burdock root (gobo) » fresh shiitake mushrooms » konjac » fried tofu pouch (aburaage)

» dashi broth » miso paste » soy sauce » mirin » sesame oil » chopped green onion » Japanese chili powder (shichimi togarashi)

Cut pork

Slice the block of pork belly to your preferred thickness. I recommend about 2mm thick.

Cut tofu & vegetables

Wash and peel the ingredients where necessary. Thinly slice the shiitake mushrooms, green onion, burdock root and tofu pouches. Cut the daikon, carrot and konjac into bitesize chunks.

Seal pork

Heat a large pot on a medium heat and melt unsalted butter. Add the pork and seal on both sides.

Add burdock root

Next, add the sliced burdock root and stir fry for one minute.

Add veg & konjac

Add the carrot, daikon radish, shiitake mushrooms, konjac and fried tofu pouch. (Don't add the green onion yet.)

Add dashi

Mix the contents of the pot thoroughly and add the dashi.

Add miso

Add the first half of the miso paste by placing it in a mesh spoon, submerging it in the broth and mixing thoroughly until it's incorporated. Mix well and simmer for 15 minutes.

Scoop foam

As the soup simmers, the pork will release scum that floats to the surface. Scoop it off as it appears using a mesh spoon. Mix occasionally.

Add green onion

After 15 minutes, add the green onion and simmer for another 10 minutes.

Season soup

Add the soy sauce and mirin, then turn off the heat. Add the other half of the miso paste using the mesh spoon technique from before. Taste test and add more miso if needed.

Serve

Divide the soup into serving bowls, drizzle with sesame oil and top with chopped green onion and shichimi chili powder. Enjoy!
