what you'll need:

» firm tofu » shiitake mushroom » bamboo shoots » wood ear mushrooms » garlic chives » garlic » ginger » black pepper » sake » mirin » cornstarch » sesame oil » soy sauce » miso paste

for the sauce:

» gyoza wrappers » warm water » all-purpose flour » cooking oil

» rice vinegar » soy sauce » chili oil » black pepper

Gather ingredients

Roughly chop mushrooms, bamboo shoots and garlic chives. Add them to a bowl with the tofu, grated garlic, grated ginger, black pepper, sake, mirin, cornstarch, sesame oil, soy sauce and awase miso paste.

Mix

Mix until the tofu has broken up and all the ingredients are evenly distributed.

Assemble

Hold the gyoza wrapper flat and add ½-1 tbsp of filling to the center. Make sure to leave a border around the edge.

Fold

Wet the border lightly with water, then gently fold the wrapper in half without letting the edges touch and pinch one corner.

Pleat

Make pleats on one side of the wrapper, pressing them on the flat side to seal.

Seal

Continue to pleat until the whole gyoza is sealed and tap the base to flatten.

Fry

Drizzle the cooking oil into a cold pan and place the gyoza in your preferred formation, using the base of the gyoza to help spread the oil. Heat on medium and fry until golden and crispy underneath.

Steam

Make a slurry with warm water and flour and pour it into the pan. Place a lid on top and steam until the liquid is almost gone. Then remove the lid and continue to cook until the liquid has completely evaporated.

Make sauce

Mix rice vinegar, soy sauce, chili oil and black pepper in a small bowl.

Plate up

Flip the gyoza onto a plate and serve with the dipping sauce.  Enjoy!
