» cod » soy sauce » mirin » cornstarch » sake » sugar » dashi » honey » green onion » sesame seeds

Marinate

Cut the cod into bitesize pieces and place them in a bag with soy sauce and mirin. Marinate in the fridge for 10 minutes.

Coat

Heat a pan of oil for shallow frying to 180°C (356 °F). While you wait, coat the marinated cod with cornstarch.

Fry

Once the oil is fully heated, fry the cod for 2 minutes on each side or until golden and crispy.

Drain

Transfer the cooked cod to a wire rack and rest for a few minutes to drain the excess oil.

Mix teriyaki sauce

In a separate pan, add soy sauce, mirin, sake, sugar, dashi and honey. Mix well and turn on the heat to medium-high.

Add the cod

Once it starts to bubble, add the cod pieces.

Thicken

Gently stir to coat the cod and cook until the sauce thickens to a syrup-like consistency. Once thickened, remove from the heat.

Serve

Serve and drizzle any leftover sauce over the top. Garnish with finely chopped green onion and sesame seeds.  Enjoy!
