what you'll need:

» cooked Japanese white rice » rice vinegar, sugar and salt » sashimi grade salmon, tuna and yellowtail » boiled scallops and shrimps » egg crepe » salmon roe (ikura) » cucumber » soy sauce » wasabi paste

Make sushi vinegar

Mix rice vinegar, sugar and salt in a small bowl until dissolved.

Season rice

Transfer the cooked rice to a wide container and pour the vinegar around. Mix until evenly distributed and cover with a clean damp towel.

Cut vegetables

Use a peeler or madoline slicer to thinly slice the vegetables and soak in lightly salted water.

Shape rice

Divide the rice into 25-30g pieces and roughly roll. Keep under the damp tea towel to stop them from drying out.

Assemble

Lay out a piece of plastic wrap and place the topping in the center with the top-side facing down. Position the ball of rice in the middle.

Wrap

Wrap tightly and twist to secure the topping to the rice.

Experiment with different designs and patterns using different ingredients.

Display on a plate or in a box and add extra toppings if you like. Enjoy!
