what you'll need:
» cooked Japanese white rice
» rice vinegar, sugar and salt
» sashimi grade salmon, tuna and yellowtail
» boiled scallops and shrimps
» egg crepe
» salmon roe (ikura)
» cucumber
» soy sauce
» wasabi paste

Make sushi
vinegar
Mix rice vinegar, sugar and salt in a small bowl until dissolved.

Season rice
Transfer the cooked rice to a wide container and pour the vinegar around. Mix until evenly distributed and cover with a clean damp towel.

Cut vegetables
Use a peeler or madoline slicer to thinly slice the vegetables and soak in lightly salted water.

Shape rice
Divide the rice into 25-30g pieces and roughly roll. Keep under the damp tea towel to stop them from drying out.

Lay out a piece of plastic wrap and place the topping in the center with the top-side facing down. Position the ball of rice in the middle.
