what you'll need:

» Japanese sushi rice » rice vinegar » sugar » salt » nori » soy sauce for dipping » wasabi

Filling ideas:

» salmon (raw/cooked/smoked) » tuna (raw/tinned) » shrimps (boiled) » cucumber » avocado » ikura  » shiso leaves (perilla) » dashimaki tamago (Japanese rolled egg)

Wash the rice

Measure the rice and pour it into a fine mesh sieve. Place the sieve in a bowl and fill with water. Wash and drain 3 times. (It's okay if the water is still a bit cloudy.)

Soak the rice

Add 100ml water for every 75g of rice and allow to soak for 30 minutes.  (1 hour in winter.)

Cook the rice

Add a lid and transfer to the stove. Heat on medium and adjust as follows: 1. Medium heat - until boiling 2. Boiling - 2 mins 3. Medium low - 3 min 4. Low - 5 minutes 5. High - 10 seconds 6. Off (rest in steam) 10 mins

Flavour the rice

For every 100g of cooked rice, add 1/2 tbsp rice vinegar, 1/8 tsp sugar and 1/4 tsp salt. Mix well until evenly distributed through the rice.

Cut the nori

Cut the nori in halves and lay it down on a flat surface. (I used a bamboo rolling mat for decoration, you definitely don't need one for temaki sushi!)

Spread the rice

Take approx 30g of sushi rice and with wet hands, spread it on one half of the nori. Leave the top corner empty so it makes a triangle shape.

Add wasabi

Use your finger to spread a thin layer of wasabi down the middle of the rice "triangle".

Add fillings and roll

Place the fillings through the middle (the same as the wasabi) then bring the bottom left corner (1) to the middle top of the nori (2). The two edges of rice should meet.

Roll and roll!

Continue to roll it diagonally so the empty nori wraps around the back and makes a cone shape.

Make it beautiful

For a beautiful and smooth cone shape, try to use the edge of the nori as a guide, the two points should meet (1 and 2).
