Marinated Tuna Sashimi Rice Bowl

what you'll need:

» Japanese short grain rice » kombu (dried kelp) » rice vinegar » salt and sugar » sashimi grade tuna » soy sauce » mirin » sake

Optional toppings:

» wasabi paste » pickled ginger (gari) » perilla leaves » chopped spring onion

Wash the rice

Measure the rice and place it in a sieve over a large bowl. Fill with cold water, swill and drain 3 times to wash.

Soak the rice

Transfer the rice to your cooking pot (or rice cooker) and add the water and a piece of kombu. Soak for 30 mins to 1 hour.

Add sake

Optional step: after 30 minutes, add a small amount of sake and mix before cooking.

How to cook rice

1. Bring to boil on medium 2. Boil for 30 seconds 3. Medium-low - 2 mins 4. Low - 5 minutes 5. High - 10 seconds 6. Turn off the heat and leave to steam for 10 mins.

Make the marinade

Pour mirin and sake into a small saucepan and boil for 1 minute.

Complete the marinade

Turn off the heat and add the soy sauce. Transfer the marinade to a wide container big enough to lay the tuna down in one layer.

Marinate

Add a piece of kombu and dip the tuna in the marinade so both sides are covered. Arrange in one layer and cover with plastic wrap. Marinate in the fridge for 30 mins.

Mix the rice

Once the rice has finished steaming, remove the kombu and mix the rice.

Make sushi vinegar

Mix salt and sugar with rice vinegar until completely dissolved.

Make sushi rice

Pour the sushi vinegar over the rice and mix gently until evenly distributed. Cover until time to serve.

Assemble

Divide the sushi rice into serving bowls and top with the marinated tuna. Add your choice of toppings and enjoy!
