Dredge pork

Sprinkle thinly sliced pork with salt and cake flour, mix until lightly and evenly coated.

Fry

Heat a pan on medium and add cooking oil. Once hot, fry the pork until both sides are golden and then transfer to a plate for later.

Cook Vegetables

In the same pan, add mirin, sugar, dashi granules and water. Mix until dissolved and then add shiitake, onion and Japanese leeks. Simmer until onions have softened.

Add pork

Add the pork back to the pan and drizzle with light soy sauce. Mix thoroughly.

Add egg whites

Separate eggs so that the whites and yolks are in separate bowls. Lightly whisk the whites, pour them around the pan. Cover with a lid and steam for 1 minute.

Add yolks

After one minute, whisk the yolks and pour them around the pan. Continue to cook until the yolks are cooked to your liking.

Serve

Serve over rice and garnish with broccoli sprouts, chopped green onions and/or red pickled ginger. Enjoy!
