Boil eggs

Bring a pot of water to a rolling boil. Add the eggs and boil for 10 minutes.

Peel

After 10 minutes of boiling, transfer the eggs to a bowl of cold water. Peel under water and dry thoroughly with kitchen paper.

Mash

Place the boiled eggs in a bowl, add a pinch of salt and pepper, and mash them with a spatula.

Mix

Add Japanese mayonnaise and honey and mix until well combined.

Assemble

Spread butter on one piece of bread and mustard on the other. Cover the butter generously with the egg mixture and close the sandwich.
