Octopus & Cucumber Sunomono Salad

what you'll need:

» soy sauce » mirin » rice vinegar » dried wakame » cucumber » boiled octopus » sesame seeds (optional)

Make the sauce

Pour the soy sauce, mirin and rice vinegar into a sauce pan and boil for 2 minutes to burn off the alcohol. Remove from the heat and allow to cool.

Soak the wakame in a bowl of cold water for a few minutes. Once rehydrated, drain the water.

salt the cucumbers

Cut the cucumber into thin slices and place them in a bowl. Add salt and rub it over the cucumber. Set aside for 5 minutes.

Cut the octopus

Cut the boiled octopus into small, bitesize pieces.

Combine ingredients

Wash the cucumber with cold water and drain the wakame, squeeze out any excess water. Add them to a mixing bowl together with the cut octopus.

Add the chilled sauce to the bowl and mix well.
