Octopus and Cucumber Sunomono
Sunomono is a light and refreshing Japanese salad made with seafood and vegetables marinated in a vinegar based sauce called "sanbaizu". This addictive dish makes the perfect appetizer or side dish to cleanse the palate!
Octopus & Cucumber Sunomono Salad
what you'll need:
» soy sauce
» rice vinegar
» dried wakame
» boiled octopus
» sesame seeds (optional)
Make the sauce
Pour the soy sauce, mirin and rice vinegar into a sauce pan and boil for 2 minutes to burn off the alcohol. Remove from the heat and allow to cool.
soak the wakame
Soak the wakame in a bowl of cold water for a few minutes. Once rehydrated, drain the water.
salt the cucumbers
Cut the cucumber into thin slices and place them in a bowl. Add salt and rub it over the cucumber. Set aside for 5 minutes.
Cut the octopus
Cut the boiled octopus into small, bitesize pieces.
Wash the cucumber with cold water and drain the wakame, squeeze out any excess water. Add them to a mixing bowl together with the cut octopus.
Add the chilled sauce to the bowl and mix well.
Dish up, sprinkle with sesame seeds and enjoy!
