Cook udon

Boil the udon for 3-4 minutes less than the time stated on the packaging, then pour into a colander and rinse with fresh water to remove any excess starch.

Brown the onion

Cut green onion into thick diagonal pieces. Heat a pan on medium and add cooking oil. Fry the onion until lightly charred, then remove from the heat and set aside.

Make broth

Take your hot pot and add dashi, soy sauce, mirin and brown sugar. Bring to boil on medium and add sliced carrots. Boil for a few minutes.

Cook meat & vegetables

Add the beef, mushrooms, crown dairy, firm tofu and cooked udon and cook with a lid for 3-4 minutes (medium heat).

Serve straight from the pot or divide it into portions. Serve with whisked egg (optional) and red pickled ginger. Enjoy!
