Divide & mix eggs

Separate one pasteurized egg for each portion and save the yolk for later. Add the white to a bowl and crack in another egg. Whisk until combined.

Cut vegetables

Slice the leeks diagonally and cut the crown daisy into 2cm pieces. Cut the stems off of the mushrooms and thinly slice. Carve a design on the cap of the shiitake if desired.

Make sauce

Add dashi granules, soy sauce, sake, sugar and mirin to a pan and mix. Add the mushrooms and heat the pan on medium low. Stir occasionally.

Add beef

Once the sauce is bubbling and the mushrooms have softened a little, add the beef and cook until it reaches your preferred doneness.

Set aside

Transfer the beef and mushrooms to a plate and set aside for later.

Cook vegetables

In the leftover sauce, cook the crown daisy and green onions until slightly softened.

Add eggs

Once the greens are cooked to your liking, pour in the mixed eggs from earlier. Cook over low to medium heat until the eggs reach your preferred doneness.

Assemble

Divide cooked rice into serving bowls and place the egg and greens mixture on top. Arrange the beef and mushrooms, then garnish with an egg yolk and some red pickled ginger. Enjoy!
