Japanese Spinach Salad in Dashi

Spinach ohitashi is a simple dish made with blanched spinach soaked in a soy and dashi-based sauce. It's quick, tasty and makes a great side dish for any Japanese meal!

what you'll need:

» Dashi (Japanese soup stock) » Soy sauce » Mirin » Chinese spinach » Salt » Bonito flakes (katsuobushi)

Make happo dashi

Add dashi, soy sauce and mirin to a sauce pan and boil for 1-2 minutes. Remove from the heat and cool to room temperature.

Blanch stems

Heat a large pot of water with a pinch of salt. Once boiling, hold the stems of the spinach in the water for 30 seconds. (Hold with tongs to protect your hands)

Submerge the spinach

After 30 seconds, submerge the rest of the spinach and blanch for 30 seconds.

Ice bath

Transfer the spinach to a bowl of ice water and let it cool for about 1 minute.

Cut

Throughly squeeze the water out of the spinach, trim the ends and cut into 4-5cm pieces (approx 2 inches).

Marinade

Transfer the spinach to a container and pour the cooled happo dashi over the top. Soak for 30 minutes in the refrigerator.

Serve

Divide into serving bowls and top with bonito flakes (or sesame seeds for a plant based version). Enjoy!
