Make filling

Finely chop the filling ingredients and add them to a bowl with the seasonings and spices. Mix until evenly distributed.

1

Assemble

Add approx 1 tbsp of filling to the center of the wrapper and wet the border with water.

2

Fold and pleat

Fold in half but don't let the edges touch. Pinch one side, then pleat and press to seal.

3

Complete

Press the edges down to secure and place on a floured plate. Repeat until all the wrappers and filling are used up.

4

Fry

Heat a frying pan on medium and add oil. Stand the gyoza up in the pan and fry until the bottom is crispy and golden.

5

Steam

Pour freshly boiled water around the pan and place a lid on top. Leave to steam until the liquid has almost gone.

6

Remove lid

Remove the lid and fry for a few more minutes until the liquid has completely gone. Once gone, remove the pan from the heat.

7

Make sauce

Mix the chicken bouillon powder, soy sauce, rice vinegar, sesame oil, chili bean sauce, chili oil, sugar, ginger, green onion and dry chili in a bowl until well combined.

8

Serve

Place the gyoza on serving plates with the crispy side facing up. Enjoy with homemade dipping sauce!
