what you'll need for the broth:

» water » kombu (dried kelp) » dried sardines (niboshi) » bonito flakes (katsuobushi) » chicken wings » ginger » garlic » spring onion

what you'll need for the sauce (tare):

» lard » chicken skin » water » soy sauce » mirin » sake » sugar » salt

topping suggestions:

» chashu (braised pork belly) » ramen egg » menma (pickled bamboo) » narutomaki (fish cakes) » chopped spring onion

Soak dashi ingredients

Remove the heads of the dried sardines and soak them in cold water with the dried kelp for 30 minutes.

Heat dashi

Place the pot on the stove and heat on medium until almost boiling. Once small bubbles appear lower the heat to a simmer.

Simmer the broth

Add bonito flakes, chicken wings, spring onion, fresh ginger and garlic cloves to the dashi. Simmer for 30 minutes.

Strain the broth

Line a sieve with kitchen paper and pour the broth through to catch all the small bits.

Heat broth before serving

The broth will be clear and golden when complete. Set aside and heat again just before serving.

Make the tare (sauce)

Heat a pan on low/med-low and melt the lard. Once melted add the chicken skin.

Render the chicken fat

Fry the chicken skin until crispy on both sides and the fat has rendered out. (Takes approx 10 mins.)

Complete the tare

Remove the chicken skin and add water, soy sauce, mirin, sake, sugar and salt. Simmer for 15 minutes until thickened.

Divide into bowls

Once the tare is done divide it into bowls (or cool and store until it's time to serve.) Boil the ramen noodles according to instructions on the packaging.

Add the broth

Add 300ml of broth to each bowl of tare and mix well.

Add noodles

Add a portion of cooked ramen noodles to each bowl.

Add toppings

Add your choice of ramen toppings and enjoy!
