- Daikon - Carrot - Snow peas - Shiitake mushrooms - Thinly sliced pork belly - Dashi stock - Light soy sauce - Mirin - Salt - Ground black pepper

INGREDIENTS

Julienne Vegetables

Start boiling a pot of water. While you wait, thinly slice the shiitake and cut the rest of the vegetables into thin matchsticks. 

STEP 1

Blanch

Set a bowl of cold water next to the stove. When the pot of water is boiling, add the carrot, daikon and snow peas and blanch for 30 seconds.

STEP 2

Cool

Transfer the vegetables to the cold water to stop them from overcooking. Discard the cooking water and place the pot back on the stove.

STEP 3

Make Broth

Pour the dashi into the pot and bring to boil. Lower to simmer and add soy sauce, mirin and pork. Cook for 1 minute, then add the vegetables and cook for 3 or until the pork is cooked through.

STEP 4

Serve

Taste the soup and season with salt to taste. Divide into serving bowls and sprinkle with ground black pepper. Enjoy!
