what you'll need:

» sashimi-grade fish » avocado » mini tomatoes » baby leaf spinach » mixed lettuce leaves

for the dressing:

» soy sauce » mirin » sugar » white toasted sesame seeds » sesame oil » olive oil » garlic paste » lemon juice » white pepper

Make dressing

Mix the soy sauce, mirin and sugar in a small sauce pan and boil for 30 seconds.

Cool

Transfer to a heatproof jug and allow to cool for a few minutes.

Complete the dressing

Add the sesame seeds, sesame oil, olive oil, garlic, lemon juice and white pepper to the jug and mix thoroughly. Store in the fridge until it's time to serve.

Wash and cut the vegetables to your liking, then place them in a bowl.
