what you'll need:

» eggs » sugar » sake » ground chicken » soy sauce » oyster sauce » mirin » spinach » sesame oil » sesame seeds » cooked rice » red pickled ginger (benishoga)

Whisk the eggs

Crack the eggs into a mixing bowl and add sugar, sake and salt. Whisk until well combined.

Scramble

Heat a frying pan on medium and add a small amount of oil. Pour in the egg mixture and mix once it starts to firm up.

Set aside

Transfer the scrambled eggs to a bowl and wipe the pan to remove any egg residue.

Fry the chicken

Add more oil if necessary and fry the chicken until lightly browned.

Season

Add soy sauce, oyster sauce, sake, mirin and sugar, and mix well.

Reduce

Increase the heat to high and fry until the liquid is completely reduced. Once reduced, remove the pan from the heat.

Blanch spinach

Bring a pot of water to a rolling boil and add a pinch of salt. Blanch the spinach for 1 minute and then drain.

Season spinach

Place the blanched spinach in a mixing bowl and add soy sauce, sugar, sesame oil and white sesame seeds. Mix well.

Assemble

Divide the rice into serving bowls and arrange the egg, soboro chicken and spinach on top.

Garnish

Top with red pickled ginger (benishoga) and enjoy!
