what you'll need:

» sashimi-grade raw salmon » avocado » soy sauce » mirin » sake » dried kelp » cooked Japanese rice » cucumber » sesame seeds, nori, chili threads (optional toppings)

Make marinade

Pour the soy sauce, mirin and sake into a small sauce pan. Boil for 1 minute and remove from the heat.

Cool marinade

Transfer the marinade to a heat proof container and cool over an ice bath to speed up the cooling process.

Cut salmon & avocado

Cut the avocado and sashimi-grade salmon into cubes and place them in a container with a small sheet of dried kelp (kombu).

Marinate

Once the marinade is cool to the touch, pour it over the avocado and salmon and place a piece of plastic wrap touching the surface. Marinate in the fridge for 30 minutes.

Assemble

Cut cucumber into cubes, place cooked rice in a bowl and top with the cucumber and marinated salmon and avocado.

Garnish & Serve

Add a drizzle of leftover marinade over each bowl and top with sesame seeds, nori and chili threads.  Enjoy!
