Milano doria is a signature dish served at the famous Italian-Japanese family restaurant chain "Saizeriya". Made with white sauce, meat sauce, and powdered cheese served over buttery turmeric rice and baked until golden, this is the ultimate comfort dish!

What you'll need:

» rice » water » turmeric powder » unsalted butter » salt » Pecorino / Parmesan cheese » Cheddar / Gouda cheese

for the meat sauce:

» ground beef » onion » garlic » canned tomato » flour » olive oil » soy sauce » curry powder

for the white sauce:

» unsalted butter » plain flour » salt » pepper » milk » single cream

Cook the rice

Add rice, water, butter, turmeric and salt to a pot and mix. Cook the rice using your usual method. (I used a rice cooker.)

Fry onion and garlic

Heat a pan on medium and add olive oil. Add finely diced garlic and onion and fry for 2 minutes.

Fry meat

Add the ground beef to the pan and fry until browned.

Add tomatoes

Once browned, mix in salt, pepper and flour. Add the canned tomatoes, mix and bring to a boil.

Season

Turn the heat down to low and add soy sauce, sugar and curry powder. Mix until evenly distributed.

Simmer

Place a lid on the pan and simmer the meat sauce for 10 minutes on the lowest heat.

Make a roux

Melt butter in a sauce pan on a low heat and mix in flour, salt and pepper to make a roux.

Add cream and milk

Gradually pour in the milk and single cream into the pan while mixing continuously.

Thicken

Increase the heat to medium low and stir over the heat until thickened. (It should coat the back of a spoon.) Remove from the heat.

Assemble

Assemble the doria by layering up the rice, white sauce and meat sauce in an oven dish.

Sprinkle with cheese

Grate the hard cheese over the top and sprinkle melting cheese around the edge on the white sauce.

Bake

Bake in a preheated oven at 220°C (or 430°F) for 10 minutes on the middle shelf. Move to the top shelf and bake for another 5 minutes to help brown the cheese.
