What you'll need:

» ground pork » ginger » garlic » spring onion » soy sauce » mirin » oyster sauce » tobanjan (chili paste)

Miso Ramen Broth

» chicken stock » smooth peanut butter » awase miso paste » ramen noodles

Toppings

» beansprouts » spinach » sweet corn » spring onion » soft boiled egg » nori » butter

Cook the pork

Melt butter and fry garlic, ginger and spring onion until fragrant. Add ground pork and fry until browned.

Add soy sauce, mirin, oyster sauce and tobanjan to the pan. Mix well and simmer until reduced.

Make the broth

Dissolve smooth peanut butter in chicken stock and pour it into the pan. Bring to boil and then turn off the heat.

Add the miso

Incorporate the miso by whisking it through a mesh spoon. Add the beansprouts and allow to cook in the residual heat.

Cook the noodles

Cook the ramen noodles according to the instructions on the packaging. In the final minute, blanch the spinach together with the noodles.

Add toppings

Add the noodles and broth then top with the pork, beansprouts and spinach. Top with sweet corn, spring onion, boiled egg, nori and butter.
