what you'll need:

» Japanese short grain white rice » cold water » kombu (optional) » sake (optional) » rice vinegar » sugar » salt

Wash the rice

Measure out the rice and pour it into a sieve. Place the sieve over a bowl and fill with water. Swish until the water becomes cloudy and then drain. Repeat three times in total to wash the rice.

Soak the rice

Transfer the washed rice to your cooking pot and add an equal amount of water. Add a piece of kombu and soak for 30 minutes to 1 hour.

Add sake

Add a small amount of sake and mix, this will add depth and give the rice a shiny quality once cooked.

Bring to a boil

Bring the water to a boil over a medium heat and allow to bubble for 30 seconds. Lower the heat to medium low and simmer for 2 minutes. Do not remove the lid at any point.

Simmer and steam

Lower the heat again to low and simmer for 5 minutes. After 5 minutes, heat on the highest setting for 10 seconds and then turn it off. Leave the rice to steam for 10 minutes on the stove with the lid on.

Mix sushi vinegar

Mix rice vinegar, salt and sugar in a small bowl until dissolved.

Remove kombu

Once the rice has finished steaming, remove the kombu.

Dampen container

Take a large container (preferably wooden) to cool the rice. Dampen the surface to stop it from sticking.

Transfer and add vinegar

Transfer the rice to the container and spread it out. Pour the vinegar mixture and mix until evenly distributed.

Mix and fan

Mix the rice while fanning to help cool it quickly, be careful not to mix too vigorously and  crush the grains.

Use to make your favorite sushi

Cover the container with a damp tea towel and use within 2 hours.  Use to make your favorite sushi!
