what you'll need:

» salmon fillets (skin-on) » potato starch » soy sauce » sake » mirin » sugar » sesame seeds » chopped spring onion

Mix the sauce

Mix the soy sauce, sake, mirin and sugar in a bowl until the sugar has dissolved.

Dry the salmon

Dry the surface of the salmon with kitchen paper and sprinkle both sides with a pinch of salt and pepper.

Dredge

Coat the fillets with a thin layer of potato starch on both sides and brush off the excess.

Fry

Heat a frying pan on medium and add a drizzle of oil. Once hot, place the salmon with the skin side down and fry for 4 minutes.

Flip

Once the skin has browned and crisped up, flip and fry on the other side for 2 minutes.

Add sauce

Pour the teriyaki sauce into the pan and spoon it over the salmon skin continuously for a few minutes until thickened.

Dish up

Plate up the salmon and pour any leftover sauce from the pan over the top. Sprinkle with sesame seeds and chopped spring onion. Enjoy!
