» cake flour » dashi  » eggs » milk » tsuyu sauce » cabbage » pork belly » pickled ginger (benishoga) » tempura bits (tenkasu)

» Worcestershire sauce » oyster sauce » ketchup » honey » soy sauce

» Japanese mayonnaise » bonito flakes (katsuobushi) » seaweed powder (aonori)

Mix the oyster sauce, Worcestershire sauce, ketchup, honey and soy sauce in a small bowl.

Make batter

Sift cake flour into a bowl and add an egg, milk, tsuyu sauce and dashi. Whisk until smooth.

Cover and rest

Cover the bowl and rest in the fridge for 30 minutes.

Add fillings

Pour half of the chilled batter into a new bowl and add half of the diced cabbage, tempura bits, pickled ginger and one egg.

Heat a frying pan on medium high and add a drizzle of vegetable oil. Add the batter to the middle and spread it out evenly.

Add pork

Lay the thinly sliced pork belly over the top of the wet batter.

Flip the okonomiyaki and lower the heat to med-low. Place a lid on and fry for 5 minutes.

Add sauce

Flip the okonomiyaki again and coat with the homemade okonomi sauce and Japanese mayonnaise.
