what you'll need:

» yellow onion » olive oil  » butter » chicken breast » chestnut mushrooms » white wine » cooked rice » salt and pepper » ketchup » Worcestershire sauce » green peas » dry parsley

for the omelette:

» eggs » milk » olive oil » ketchup to decorate » dry parsley (optional garnish)

Fry onions

Heat a pan on medium and add olive oil and butter. Once the butter has melted, add finely diced onion and fry until translucent and slightly golden.

Add chicken & mushrooms

Finely slice the mushrooms and cut the chicken into small pieces. Add them to the pan and fry until the chicken is sealed.

Add wine

Add the white wine and stir-fry until the chicken is cooked through.

Add rice

Add the cooked rice and mix thoroughly.

Flavor

Add ketchup and Worcestershire sauce and mix until evenly distributed.

Add peas and parsley

Add green peas and dry parsley and mix well. Remove the pan from the heat and set aside for now.

Whisk eggs

Whisk the eggs in a mixing bowl with milk and olive oil.

Strain

Pour the egg mixture through a fine mesh sieve to make it extra smooth.

Oil the pan

Preheat the pan on medium and coat with an even layer of cooking oil. Remove the excess with kitchen paper.

Add eggs

Pour one portion-worth of the eggs into the pan and whisk thoroughly until it begins to set.

Coat edges

Tilt the pan around to coat the edges and cook until the egg is half-done.

Add rice

Place one portion-worth of rice in the center and shape it into an American football shape.

Fold other edge

Repeat on the other side. It's ok if you can't close the omelette since this will be hidden underneath. (Don't try to force it as this can cause the omelette to break.)

Flip

Slide the spatula under the omelette to ensure it's not stuck to the pan, then flip it onto a plate.

Neaten

Cover the omurice with plastic wrap (or kitchen paper) while it's still warm and press the edges in to neaten up the shape.

Garnish

Garnish with ketchup and parsley for decoration.

Serve

Serve on its own, with salad or your favorite sides. Enjoy!
