what you'll need:

» thinly sliced pork belly » garlic cloves » fresh ginger » shimeji mushrooms » carrot » onion » cabbage » beansprouts » Chinese chives » bell pepper » sesame seeds » chili threads

for the sauce:

» Chinese chicken stock » oyster sauce » soy sauce » salt » sugar » slurry (water mixed with potato starch) » sesame oil

Prepare the vegetables

Julienne the ginger and carrots, thinly slice the onion, garlic and bell pepper and roughly cut the cabbage. Leave the mushrooms whole and cut the Chinese chives into 5cm pieces.

Seal the meat

Heat a wok on medium and add a drizzle of oil. Once it's hot, add the pork with a sprinkle of salt and pepper. Add the garlic and fry until the pork is sealed.

Add vegetables

Add the vegetables according to cooking time. Ginger, carrot, onion and mushroom go first.

Add cabbage and peppers

Once the carrot and onion are slightly softened, add the cabbage and bell pepper. Stir fry for 1-2 minutes.

Add beansprouts

Add the beansprouts and stir fry for 1 minute.

Add condiments

Add the chicken stock, oyster sauce, soy sauce, salt and sugar.

Add chives

Mix thoroughly and then add the Chinese chives.

Add slurry

Mix 1 tbsp water and 1 tbsp potato starch in a small bowl to make a slurry. Pour the slurry into the wok.

Thicken

Mix well and continue to stir fry until the sauce has become thick, glossy and coated the ingredients.

Serve

Transfer to serving plates and drizzle with sesame oil. Sprinkle with sesame seeds, chili threads and enjoy!
