Coat the thinly sliced beef in a thin layer of potato starch.

Seal

Heat a pot on medium and add cooking oil. Seal the beef on both sides and then transfer to a plate.

Make broth

In the same pot, add sake, soy sauce, cane sugar, water and dashi. Mix and bring to almost boiling over a medium heat.

Add ingredients

Add the tofu, enoki mushrooms, onion and cooked beef. When it starts to bubble gently, lower the heat to simmer.

Simmer

Place a drop lid on the surface of the liquid and simmer for 10 minutes.

Cool

Cool for 30 minutes to 1 hour to let the flavors develop. Reheat right before serving.

Blanch snow peas

Bring a small pot of water to a rolling boil and blanch the snow peas for 30 seconds to 1 minute. Cut diagonally and use as a garnish.

Serve

Arrange the reheated niku dofu on small plates and drizzle with sauce. Garnish with snow peas and enjoy!
