what you'll need:

» chicken wings » cornstarch » cake flour » fine white pepper » garlic » soy sauce » mirin » sake » honey » sesame seeds

Mix sauce

Mix soy sauce, mirin, sake, honey, sesame seeds and a grated garlic clove in a cold sauce pan.

Boil

Place the pan on the stove and bring to a boil over a medium heat. Once boiling, lower to a simmer.

Simmer

Simmer until the sauce has thickened and reduced by half. Then remove from the heat and set aside for later.

Season

Preheat a pan of oil to 160C (320F). While it's heating, sprinkle the chicken wings with salt and pepper on both sides.

Coat

Coat the surface of the wings with a thin, even layer of cake flour and corn starch.

Fry

Once the oil is hot, place the wings in and fry for 3 minutes on each side.

Increase heat

Turn up the heat and fry the wings at 190C (374F) for 1 minute on each side.

Rest

Transfer the cooked wings to a wire rack and rest for a few minutes to allow the excess oil to drip off.

Brush

Brush each side with a generous layer of the sauce from earlier.

Dust

Dust with fine white pepper and enjoy!
