what you'll need:

» shimeji mushrooms » enoki mushrooms » shiitake mushrooms » nameko mushrooms » dashi » soy sauce » miso paste (awase) » spring onion

Heat dashi

Heat the dashi in a pot over a medium heat until almost boiling.

Add soy sauce

Add a small amount of soy sauce and mix.

Add mushrooms

Cut the shiitake into slices and trim the enoki. Leave the shimeji and nameko whole and add them to the dashi. Once it starts to bubble, lower the heat to simmer and cook for 3-5 minutes.

Add miso

Turn off the heat and add the miso paste to a mesh spoon or ladle. Dip it in the dashi to saturate the miso paste and whisk until it breaks up and distributes evenly through the soup.

Serve

Mix well and divide into serving bowls. Top with chopped spring onions and enjoy!
