what you'll need:

» Salmon fillets (skin on) » Salt » Potato starch » Sesame oil » Awase miso paste » Sake » Grated garlic » Soy sauce » Light brown sugar

Make the glaze

Mix the miso paste, sake, grated garlic, soy sauce and light brown sugar in a small bowl and set aside for later.

Prepare salmon

Preheat a frying pan on medium high. While it's heating up, wash the salmon with cold water and pat them dry with kitchen paper.

Season

Sprinkle both sides of each fillet with a pinch of salt.

Coat

Coat the fillets with a thin layer of potato starch all over.

Fry

Once the pan is hot, add the sesame oil and then place the salmon in the pan skin side down. Fry for 2 minutes on each side or until he salmon reaches an internal temperature of 52°C (125°F).

Add the glaze

Turn off the heat and pour the glaze into the pan. Move the salmon around the pan until fully coated with the sauce.

Plate up

Transfer each fillet to serving plates and sprinkle with chopped spring onion. Enjoy!
