what you'll need:

» cake flour » matcha powder » baking powder » baking soda » cinnamon powder » salt

» egg » sugar » natural yogurt » whole milk » vegetable oil » vanilla essence » white chocolate chips

Mix dry ingredients

Sift the flour and matcha into a bowl and add the baking powder, baking soda, cinnamon and salt.

Make a well

Whisk until the ingredients are well combined and make a well in the centre.

Mix eggs & sugar

In a separate bowl, whisk the eggs and sugar together until the sugar is dissolved.

Combine wet ingredients

Add yogurt, milk, oil and vanilla essence to the sugar and egg mixture. Mix until combined.

Combine all

Pour the wet ingredients into the well in the dry ingredients and fold together with a spatula. Be careful not to over mix.

Add chocolate

Fold the chocolate chips into the mixture until evenly distributed.

Bake

Spoon the mixture into muffin cases 2/3 of the way up. Bake at 200°C (390°F) for 5 minutes then lower the heat to 180°C (360°F) and bake for another 15 minutes.

Cool

Cool on a wire rack and enjoy the same day! (Alternatively, freeze for up to 3 months.)
