what you'll need:

» butter (room temperature) » white sugar » light brown sugar » egg » vanilla essense » plain flour » baking soda » salt » matcha powder » white chocolate

Combine sugar and butter

Mix the white sugar, light brown sugar and room temperature butter until smooth and creamy.

Add egg and vanilla

Crack an egg into the bowl and add the vanilla. Mix until combined.

Mix the dry ingredients

Add the flour, baking soda and salt to a separate bowl and sift in the matcha. Whisk until evenly distributed.

Combine wet and dry ingredients

Pour the dry ingredients into the wet ingredients and mix until a sticky dough forms.

Add the chocolate

Cut the white chocolate into rough chunks and mix it into the dough.

Roll and chill

Roll into balls about 40g in size (approx 2 tbsp) and place on a lined baking sheet with plenty of space apart. Chill in the fridge or freezer while you preheat the oven to 180°C (350°F).

Bake

Bake on the middle shelf for 8-10 minutes or until the edges are lightly golden. (The centre should be barely cooked.)

Shape

While the cookies are still warm, neaten the edges with a knife or a large glass. (Do not cut.) Leave to cool on the baking sheet for 20-30 minutes.
