Matcha & Dark Chocolate Brownies
what you'll need:
» dark chocolate (70% cacao)
» unsalted butter
» caster sugar
» light brown sugar
» all-purpose flour
» matcha powder
» vanilla essence
Melt chocolate and butter
Place chocolate and butter in a heat proof bowl, heat in the microwave in 20 second increments stirring each time until completely melted.
While the mixture is still hot, add the caster sugar and light brown sugar. Mix until the sugar has dissolved and then leave to cool for 10 minutes.
Mix dry ingredients
Mix the flour, matcha and salt in a separate bowl and set aside for later.
Add eggs & vanilla
Once the chocolate has cooled, add the eggs one at a time and whisk thoroughly. Add the vanilla essence and mix again.
Sift in dry ingredients
Sift the dry ingredients into the chocolate and fold them in until the mixture is well incorporated and smooth. Be careful not to over-mix.
Transfer the mixture to a lined baking pan and place in the oven preheated to 180°C (356 °F).
Bake the brownies for 23-25 minutes or until a skewer comes out with moist crumbs. Cool on a wire rack.
Cut & dust
Once cool, cut into 9 or 12 squares and dust with matcha powder.
Chill in the refrigerator for an extra fudgy texture. Enjoy!
