what you'll need:

» sashimi-grade yellowtail » sake » mirin » soy sauce » ground sesame seeds » grated ginger » wasabi paste » sesame seeds » green onions » perilla leaves

Heat base

Pour the sake and mirin into a small saucepan and boil for 1 minute to burn off the alcohol.

Make marinade

Pour the contents of the pan into a heatproof bowl and add soy sauce, ground sesame seeds, grated ginger and wasabi paste. Mix until combined.

Marinate

Add the yellowtail sashimi to the bowl and mix until every piece is coated in the marinade. Cover with plastic wrap to prevent oxidization and marinate in the fridge for 1-12 hours.

Serve

Place in serving bowls and garnish with sesame seeds, perilla leaves and finely chopped green onions.  Enjoy!
