what you'll need:

» cooked rice » sashimi grade tuna » soy sauce » mirin » sake » kombu (dried kelp) » sesame seeds » egg yolk (pasteurized) » perilla leaves » wasabi

Set rice

Start cooking the rice so that it's ready once the tuna has finished marinating.

Boil sake and mirin

Pour the sake and mirin into a small saucepan and boil for 1-2 minutes to burn off the alcohol.

Add soy sauce

Turn off the heat and add the soy sauce.

Cool

Pour the sauce into a wide container and allow to cool to room temperature. (Speed up the process by placing the container over ice or cold water.) Once cooled, add a piece of kombu.

Add the tuna

Dip the tuna pieces in the marinade to coat both sides and then lay them flat in the container. Cover with plastic wrap and marinate in the fridge for 30 minutes.

Assemble

Divide the rice into bowls and then arrange the tuna on top. Drizzle with 1/2 tbsp of leftover marinade and top with shredded perilla leaves, wasabi and an egg yolk. Enjoy!
