what you'll need:

» daikon radish » carrot » salt » sugar » rice vinegar » soy sauce » yuzu juice & peel (optional) » kombu (dried kelp)

Cut "matchsticks"

Cut the carrot and daikon into matchsticks about 3mm thick.

Dehydrate

Place the carrot and daikon in a bowl and rub with salt. Rest for 15 minutes to draw out the excess moisture.

Pickling juice

Add rice vinegar, yuzu juice, water, salt, sugar and soy sauce to a zip lock bag and scrunch to mix. Once combined, add yuzu peel and a piece of kombu.

Squeeze

Squeeze the carrot and daikon thoroughly and discard of any liquid that comes out.

Pickle

Transfer the carrot and daikon to the bag with the pickling liquid. Push the air out and seal. Rest in the fridge overnight (at least 12 hours).

Enjoy!

Dish up and enjoy as a refreshing side. Keep refrigerated and consume within 4-5 days.
