what you'll need:

» firm tofu » black pepper » potato starch » soy sauce » sake » mirin » ginger paste » garlic paste

Cut the tofu

Holding a knife parallel to the chopping board, cut the firm tofu horizontally through the middle. Try to make sure they are the same thickness.

Remove excess moisture

Wrap each piece in kitchen paper and place on a microwavable plate. Microwave for 1 min 30 seconds at 600W.

Sprinkle with pepper

Sprinkle the front and back of each piece with a pinch of black pepper.

Coat with potato starch

Coat each piece with a thin layer of potato starch on both sides.

Fry until crispy

Heat a frying pan on medium and add a drizzle of olive oil. Fry the tofu on both sides until golden and crispy.

Make sauce

Mix the soy sauce, sake, mirin, ginger paste and garlic paste in a small bowl.

Add the sauce

Lower the heat and pour the sauce into the pan. Continue to fry until it becomes thick and glossy. Turn the tofu and move it around the pan to ensure it gets evenly coated in the sauce.

Dish up

Transfer the tofu to serving plates and top with chopped spring onion and chilli threads (optional).
