what you'll need:

» eggs » yellow onion » small gherkins » Japanese mayonnaise » tomato ketchup » lemon juice » sugar » salt and pepper » dried parsley

Boil eggs

Bring a pot of water to a boil and add a pinch of salt. Take eggs straight from the fridge and gently submerge them in the water. Boil for 10 minutes with the lid on.

Cool & peel

Transfer the eggs to ice cold water to cool for 10 minutes. Then peel and dry them with kitchen paper.

Cut ingredients

Finely dice the pickled gherkins, yellow onion and boiled eggs.

Add condiments

Transfer to a bowl and add Japanese mayo, ketchup, lemon juice, sugar, salt, freshly ground black pepper and dried parsley.

Mix

Mix until all the ingredients are evenly distributed.

Store

Transfer to a sterilized container and store in the fridge for up to 5 days. Enjoy!
