what you'll need:

» Asian/Chinese spinach » salt » onion » soy sauce » ground sesame seeds » light brown sugar » white sesame seeds » dashi stock (or water)

Prepare the spinach

Bring a pot of salted water to a boil. While you wait, cut the roots off the spinach and wash the leaves and stems thoroughly.

Divide into parts

Divide the spinach into 3 parts: the leaves, the middle and the thick stems. Tie each one into a bundle using butchers string.

Boil the stems

The bottom part needs to cook the longest, so once the water is boiling, add the thickest bundle first and set a timer for 1 minute.

Add the middle part

After 1 minute, add the middle part to the pot and set a timer for 45 seconds.

Add the leaves

Finally, add the leaves bundle and set a timer for 30 seconds.

Chill

Transfer all the bundles to a bowl of ice cold water and leave them to cool while you prepare the sauce.

Make sauce

Add salt, soy sauce, ground sesame seeds, whole sesame seeds, light brown sugar and dashi stock to a large mixing bowl.

Coat the spinach

Take the spinach out of the ice water and squeeze thoroughly to remove the excess water. Add it to the bowl and mix until evenly coated.

Serve

Transfer to serving plates or use in a bento. Enjoy!
