This smooth and creamy Japanese style potato salad is packed with crunchy carrots, refreshing cucumber and crispy bacon then seasoned with Japanese condiments to make it the ultimate crowd-pleaser! It's perfect for parties, sides or bento boxes!
Japanese Style Potato Salad
what you'll need:
» Japanese mayonnaise
» Black pepper
» Sesame oil
» Dried parsley
Wash and peel the potatoes, then cut them into thirds or quarters and place them in a pot of cold water. Bring to a boil, lower to a simmer and cook for 12-15 minutes.
Cut the cucumber and carrot
Peel the carrot and slice it, then cut the slices into quarters. Cut the cucumber into 1-2mm slices.
Soak the cucumber slices in a bowl of cold water seasoned with a pinch of salt. Set aside for later.
Cut the bacon into squares and preheat a frying pan on medium-high. Once hot, add oil and fry the bacon until crispy. Once cooked, remove from the heat and set aside.
Once the potatoes have been boiling for 12-15 minutes, add the carrots. Continue to simmer for 5 minutes or until you can pierce the potatoes with a fork.
Drain the pot of water and divide the carrots and potatoes. Mash the potatoes in a large mixing bowl until smooth.
Add carrots and bacon
Add the crispy bacon and parboiled carrots to the bowl and mix well.
Next, drain the water from the cucumber and add them to the bowl.
Season & chill
Add the mayonnaise, black pepper, sugar and sesame oil to the bowl. Mix thoroughly, cover and chill for 30 minutes.
Serve as a side dish or add it to a bento box and enjoy!
