Japanese Pork Skewers Recipe

INGREDIENTS

● Pork shoulder ● Japanese leek (negi) ● Salt and pepper ● Sake ● Yellow miso paste ● Sugar ● Garlic paste ● Sesame oil ● Dashi granules ● Chili powder

Make the Sauce

Add the sake, miso paste, sugar, garlic paste, sesame oil, dashi granules and chili powder to a pan. Mix and simmer in for 5 minutes or until thickened.

STEP 1

Cut the Negi

Wash the Japanese leek, pat dry and cut it into 2-3cm pieces.

STEP 2

Cut the Pork

Cut the pork shoulder into chunks a similar size and thickness to the leeks.

STEP 3

Assemble

Start preheating your grill or broiler on high. Push the pork and leek onto skewers, alternating between pork and leek. Sprinkle with salt and pepper on both sides.

STEP 4

Grill

Lightly grease the wire rack to prevent sticking. Grill the skewers for 5 minutes on each side or until cooked through and slightly charred.

STEP 5

Brush with Sauce

Brush with sauce and grill for 2 minutes, then flip and repeat on the side side.
